Ingredients:
2 large apples, cored and cut into small (about 1/4") pieces; peel the apples if their skin is thick
3/4 cup of all purpose flour
1/2 cup of brown sugar or coconut sugar -- you can use white sugar, but the flavor will be somewhat different.
3 eggs
1/2 teaspoon of vanilla extract
1/4 teaspoon of ground cinnamon
1/4 teaspoon of baking powder
pinch of salt
Preheat the oven to 350F. In a large bowl combine eggs with sugar, pinch of salt and vanilla extract. Slowly add flour, mixing well. Add cinnamon and baking soda. Fold apples.
Poor the batter in a greased cast iron skillet. Bake for about 50 minutes or until the edges are golden brown. Enjoy!
